- 1 cup pancake syrup

- For fried chicken: Wash the chicken thoroughly, then cover all the pieces with 1 3/4 cup buttermilk. Refrigerate overnight or for 24 hours.
- When you are ready to fry the chicken, take the bowl out of the fridge and let it sit on the counter for 30 minutes to cool.
- Meanwhile, preheat the oven to 360 degrees F and mix the breading. In a large bowl, add flour, seasoned salt, paprika, black pepper, thyme, and red pepper (extra red pepper if you like heat) and stir well.

Turn the pieces over, cover again and cook for another 3 to 5 minutes. Always monitor the oil temperature so that the chicken does not burn. - Put in a separate bowl, and whisk together the milk, vanilla, and 2 egg yolks. Pour over dry ingredients and stir very gently until halfway through. Add in the melted butter and chopped jalapenos and mix gently until combined.
- In a separate bowl (or using a mixer), whisk 4 egg whites until stiff. Slowly attach them to the batsman, preventing them from joining all the way.
- Scoop the batter into your waffle iron in batches and cook according to the manufacturer's instructions (tilt to be slightly darker golden and crisp!).
