This cake is bursting with fresh mango flavor! It has amazingly simple ingredients (only 9 total!) But it's a show-stopping and it tastes as good as it looks.
This mango cake is a close relative of our wildly popular strawberry cake. Fresh sweet mangoes shine in this recipe. Introduce it to your next party and you will get a lot of compliments.
Mango is the real star of this cake so be sure to pick some good, sweet baked picks. Mango cakes add a beautiful pop color, incredible flavor, and healthy nutrients.
Sponge Cake Ingredients:
- 6 large eggs, room temperature
- 1 cup (210 grams) of cinnamon
- 1 cup (130 grams) flour for all purposes
- 1/2 teaspoon baking powder
Mango Cake Filling / Topping:
- In 1 pound or 2 medium fresh mangoes, peeled and finely chopped strips
- 1 pound or 2 medium fresh mangoes (1 1/2 cups net)
- 1 to 4 tablespoons sugar if needed
Ingredients of cream cheese frosting:
- 16 oz. cream cheese (2 packages), soft
- 1 cup (16 tablespoons) unsalted butter, soft
- 2 1/2 cup powdered sugar
- 2 tablespoons vanilla extract
How to make a sponge cake:
Preparation: Preheat the oven to 350˚F. So line the bottom of the 2 ″ cake pan with parchment (do not grease the pan).
1. In a stand mixer bowl equipped with whisk attachments, beat 6 eggs at high speed for 1 minute until foam comes out. Slowly add 1 cup of sugar then keep beating on high for 8 minutes. When you pull it up, it will be whipped and become a thick ribbon.
Chefs' Tip: This classic European sponge cake depends on the size of the beaten eggs so don't rush into the mixing process.
2. In a separate bowl, stir together 1 cup flour and 1/2 tablespoon baking powder. Sift the flour into 1/3 of the flour at a time, folding between each. Fold until there is no liner left, scrape down to catch the hidden flour pockets.
Divide the finished cake evenly between the pans and bake at 350˚F for 23-28 minutes (my oven takes 25 minutes). The tops should be golden brown and come back slightly ripe.
3. Use a knife or thin spatula around the edges to loosen and invert the wire rack. Peel back the parchment paper immediately. Place the cake on the right side before cutting it in half and cool to room temperature.
How to make cream cheese frosting:
1. In a bowl of a stand mixer equipped with the whisk attachment, mix 16 ounces of cream cheese, 1 cup butter, 2 1/2 cup powdered sugar, and 2 tablespoons vanilla. Beat on the bottom to combine, then rise to the top and beat for 5-6 minutes, scraping the bowl as needed.
Frosting should be whipped, soft and spreadable. Transfer 1 cup of frosting to a piping bag with large open star tips and refrigerate until ready to use for topping.
The best way to cut mangoes:
1. In the middle of the fruit is a long, flat seed that extends from the stem to the nose. Cut around the sides of all 4 whole mango seeds resulting in 8 parts. Separate the 4 parts - you will need them to decorate the top. So peel a squash, grate it and squeeze the juice. So taste the mango puree and add sugar to taste if needed.
How to Assemble Mango Cake:
1. Place the first slice of cake on a platter and spread well with 1/2 cup mango puree. So the second layer of cake spread 1/2 cup frosting and place it on the frosting side on the first layer so that the cream and mango hug.
Repeat with the rest of the layers, then cover the top and sides with the remaining frosting. The pipe around the upper border of your cake is safe.
2. Peel 4 special parts of mango and chop finely, cut some strips long and some wide. So place the pieces in the rings around the cake, starting with the longest pieces and slightly overlapping each piece until only 1/2% space is left in the middle. Roll a long, thin strip of mango into a coil and place it in the middle. For easy slicing, the cake can be served immediately or refrigerated for 2 hours. Cover and refrigerate for 3 days.
Tips for Delicious Mango Cake:
Be sure to enjoy your mango and mango filling. Sometimes you can find mixed mango (or even a bad mango). If your filling tastes mild, you can sprinkle it with a little sugar and/or lemon juice.
