What is a Best Philly Cheesesteak?

Philly Cheesesteak is a sandwich made with very finely chopped rib steak, caramelized onion, and provolone cheese. This simple collection is as original as the classic on the East Coast.

The Philly Cheese Steak has been modified to include bell peppers and mushrooms on the West Coast, but in a real "Philly" only steak, onions, and cheese are served on the roll.

Which beef cut should I use?

Ribeye Philly Cheesesteak is the steak of choice for sandwiches. When cooked, it is well-marbled and soft. Another cut we have used with very good results is flank steak which is thin but very soft when cutting against grains. If you use flannel steak, you will need a little extra oil on the cooking surface.

Best Cheese for Philly Cheesesteak:

The most popular cheese is mild propolis. We've tried a variety of provolone brands and the only one we didn't enjoy was the "aged" provolone from Costco. Old Provolone cheese tasted great. Another popular option is white American cheese. Some Philadelphia restaurants include Velveeta-like cheese, but we like Provolone the most.

Tips for finely chopping beef:

The key to a great steak is the very finely chopped pieces of beef. For easy slicing, cover and freeze your steak for 30-40 minutes (freeze a thick steak for 40 minutes and a thin steak for 30 minutes). Cut off any excess fat and silver skin (if any) then use a sharp knife to finely chop the grain.

Time-saving advice:

Ask your butcher to finely slice your beef. If you plan,  they can keep the stack in the freezer when you shop to get these thin slices of paper.
