  • 2 tablespoons ghee

  • 1-2 cilantro / Thai green chili (whole)
  • 2 pounds of boneless chicken
  • 8 small tomatoes (sliced)
  • 2 cups plain milk yogurt (spread)
  • 1 teaspoon pepper (freshly ground)
  • 1 teaspoon hot spices
  • 2-3 green chilies (cut in half)
  • 1-2 tablespoons fresh ginger (julienne)
  • 1 teaspoon fresh red pepper (chopped)
  • 2 tablespoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • 2 tablespoons kosher salt (split)

Method for chicken karahi

1, Take a large pan, preferably a heavy one and keep it on high heat. Add a little ghee and oil. Once hot enough, put some onions in the pan and then let them fry for about 5 to 6 minutes or until lightly golden. Add some ginger, garlic and some whole green chilies’ then fry for about a minute.

2, Then add half a teaspoon of salt to the chicken. Fry it for about 5 minutes. Make sure the chicken has changed color and that no more water is leaking out. Add tomatoes, cumin, coriander, red pepper and salt. Fry this mixture for one more minute.

3, Reduce heat to low and make sure it comes to medium then cover the mixture. Let the chicken cook for about 20 minutes, making sure you stir it at least once in a while.

4,  After that, you can raise the heat again. Let the mixture roast for about 10 more minutes until the chicken is fully cooked and the excess liquid is reduced. When the used ghee or oil starts to separate, the chicken will start to shine.
